Fujian China is famous for its Jasmine teas and the best are scented with the jasmine flowers up to seven times, each time removing the "spent" flowers to avoid bitterness and over fermentation. The cup is pale when agonized two minutes and slightly deeper the second steep. Too much agony will result in a bitter astringent cup. Many folks use it as a refreshing floral iced tea.
