Café Directo is a coffee supplier in Costa Rica run by Gerardo Arias, one of the oldest farmers selling to Cafe Moto. Gerardo was originally with Llano Bonito Cooperative which was the first fairtrade cooperative coffee we ever bought back in 2001.
Gerardo developed Café Directo to sell his coffees and we are pleased to bring you his Costa Rican Anaerobic.
Anaerobic coffee is coffee that has been fermented without oxygen in sealed tanks, which results in a distinct flavor profile.
Process: Coffee cherries are placed in large barrels with water and sealed from oxygen for 48 to 72 hours. The fermentation process is more intense and carefully controlled than the natural fermentation that occurs during drying.
Flavor: Anaerobic coffee is known for its complexity and unique flavors, which can include wine-like notes, fruit, and florals. It’s often described as having a sweet taste and smooth mouthfeel, and is lower in acidity than other coffees.
Tasting Notes: Grape juice, sweet pear, guava, passion fruit, chocolate sauce, sweet wine, smooth body with fruit punch acidity.
